A Special Celebration with Chico’s Off the Rack

As we get closer to celebrating Mother’s Day on Sunday I wanted to share our special birthday celebration of our grandchild, Livie Lee, and Easter celebration.

Whew! Where did the year go! I can’t believe our little peanut turned one! There is something so extraordinary as being a grandmother to a little person who you love unconditionally as I did with my own children.

Preparation for our Easter/ birthday celebration began on Saturday when my son Alex and I began to make the dinner for our party. You can find all the Easter recipes on this post I wrote about wearing another wonderful Chico’s Off the Rack outfit. You can read it here.

This fuschia pink maxi skirt ensemble was the perfect outfit to wear for our special birthday celebration for Livie. Everything I am wearing is from Chico’s Off the Rack.

We were so happy that our son Alex (NJ) and my mother (MN) joined us for Livie’s birthday. (This is going to be our Christmas card and you get to see it today!)

Michael and Jennifer have been wonderful parents to our little angel and I am so proud of them!

Alex loves to help me out in the kitchen and since these are the recipes used for every Easter celebration he wanted to learn how to make them. These recipes were passed down by my husband’s mother and grandmother.

Alex stuffed the crepes while I cooked them. We made 90 manicotti and arancini because we had 30 guests for Easter and Livie’s birthday celebration.

The Arancini are stuffed rice balls filled with a beef, pork, Italian sausage, and peas ragu.

They are supposed to be smaller than how I prepared them, but I prefer my arancini to be bocce ball size. Alex also made his bacon deviled eggs as an appetizer.

The main meal of manicotti, filet mignon, green beans, and salad was a hit with everyone. Everyone loved the homemade manicotti and arancini!

The dessert table was filled with sweet custom cupcakes, a smash cake for Livie, and my carrot cake (a recipe passed down from Steven’s grandmother.)

Livie had her own smash cake. (Smash cakes are small frosted cakes made just for the birthday guest of honor. Give it to your kid and let him or her dig into it with their hands.)

My husband and I just love our little girl. When we walk into the room she always gives us her biggest squintiest smile and our hearts melt.

I love watching my husband interact with Livie. Such a wonderful feeling knowing how much he has loved his children and now his grandchildren.

I have never shopped “Chicos Off the Rack”, so I need to take a look! And that meal looks like it was fantastic!       I am going to start taking better photos of food presentations because I always serve in disposable tin pans for large parties (easier clean up!) and they look horrible, but the food was delicious!
