Easy Anniversary Dinner Party with Wildgrain Box
I love entertaining at home and serving family and friends a delicious Italian pasta dinner. Recently we celebrated our anniversary and even though we usually go out for a wonderful dinner to celebrate, this year we dined at home. What Makes Wildgrain Sourdough Bread Better?
Making sourdough bread takes a lot of time spent in the kitchen. You get to save time and enjoy the health benefits of delicious unprocessed bread delivered to your doorstep. We love to have a great bottle of wine with our cheeses and bread.
For dinner, I made my husband’s favorite shrimp pasta dish. The Wildrain linguine only takes minutes to cook! You can use fettuccine or linguine from Wildgrain for my recipe.
Shrimp Scampi
Ingredients
- 2 packages of linguine or Fettucine from Wildgrain
- 2 lbs extra-large shrimp, peeled and deveined
- 3 Tbsp extra virgin olive oil
- 3 Tbsp unsalted butter
- 4 garlic cloves, minced (4 tsp)
- 1/2 cup dry white wine or chicken/seafood stock
- 6 bottles of clam juice (use less juice if you don’t like your scampi dryer)
- Salt and freshly ground black pepper
- 1/8 tsp red pepper flakes (optional)
- 2 Tbsp fresh lemon juice
- 1/4 cup chopped fresh parsley
Instructions
- Cook linguine according to package instructions.
- Meanwhile, melt butter with olive oil in a 12-inch skillet just over medium heat. Add garlic and saute 1 – 2 minutes until just lightly golden (don’t brown or it can taste bitter).
- Add wine and simmer until reduced by half, about 2 – 3 minutes.
- Add in shrimp in an even layer season with salt, pepper, and red pepper flakes and cook until shrimp turn pink, about 1 1/2 – 2 minutes per side.
- Stir in lemon juice and parsley then toss shrimp and sauce with pasta. Serve immediately
A simple salad was perfect to have with the pasta.
For dessert, we had the delicious caramel nut tarts from Wildgrain!
