Sharing my Italian Baked Chicken and Rice Pilaf recipe

Ladies, I hope you’re having a wonderful weekend! The weather is absolutely gorgeous this weekend in Atlanta! It’s been raining so much here lately that I’m happy to see the sun shining! Today I am going to share with you my mother-in-law’s famous Italian baked chicken and rice pilaf recipe! This recipe is a favorite in our family and I hope you try it!

Italian Baked Chicken and Rice Pilaf

I have seen many recipes on the internet using bottled Italian dressing for their baked Italian chicken. However, we make everything in one 9×13 pan and bake it in our dressing. Super simple and super delicious! This recipe serves 6 but you can adjust the chicken and rice pilaf accordingly. I use a roasting pan for my family.

This recipe is all about eyeballing the olive oil, red wine vinegar, and seasonings. You are just pouring everything over the chicken.

Ingredients:

  • 8-12  Chicken parts. I use a combination of Breasts, thighs, and legs with skin on. ( You can also use skinless parts too. But you will need to reduce the baking time to 1 Hour.)
  • Olive Oil
  • Red Wine Vinegar
  • Italian seasonings
  • Garlic powder
  • Onion powder
  • Salt & Pepper

Instructions:

  • Clean and pat dry chicken parts
  • Place them in a lightly sprayed or oiled 15×10 pyrex casserole pan or larger roasting pan, (depending on how many pieces you’re making)
  • In your pyrex baking dish, arrange chicken, skin side up,  in a single layer.
  • Pour Olive oil over the chicken.  You want to coat the chicken in olive oil, not drown it. A thin layer on the bottom of the pan.
  • Pour red wine vinegar over the chicken. Same as olive oil. A thin layer on the bottom of the pan.
  • Sprinkle Italian seasonings, Garlic powder, onion powder, salt & pepper over each piece of chicken.
  • Bake chicken in a 400 degree preheated oven for 1 hour.
  • Remove from oven and turn chicken skin side down. Bake another 30 minutes, or until cooked through. (depending on the thickness of chicken).

Rice Pilaf

This is the easiest rice pilaf that will have your family asking for seconds!

Savory Homemade Rice Pilaf

Ingredients:

  • 2 cups of uncooked long-grain rice
  • 1/3 box of angel hair pasta, broken up in pieces
  • 4 Tbs. of butter
  • 4 Tbs. of olive oil
  • 4 Cups of beef broth
  • 2 Cans of Campbell’s French Onion soup
  • Salt & Pepper to taste
  • Garnish with Italian Parsley

Instructions:

  • Melt butter and olive oil in a skillet that has a lid. I use a Teflon-coated skillet when making this pilaf.
  • Add uncooked rice and broken angel hair to the skillet. Saute until the rice and pasta turn  l.ightly brown
  • Add beef broth and french onion soup to the skillet.  Season with salt & pepper. Stir and bring to a boil.
  • Reduce heat to low and cook with the lid on for 2025 minutes. Until the rice has absorbed the liquid.
  • Garnish with Italian parsley and serve.Savory Homemade Rice Pilaf

Do you wear ponchos? I have about 6 silk-like ponchos in my closet from over the years. As long as companies are still selling poncho tops I will keep wearing mine. I love how ponchos flow and look fabulous when we wear them. This leopard print poncho from my closet is perfect for entertaining this fall. The pumpkin and brown colored leopard print is one of my favorites. Even though this top is 5 years old from Chico’s, leopard print is still very popular to wear this year.

      I tend to cook by eyeballing amounts and so did my wonderful mother-in-law! I use to sit in her kitchen to watch her cook. I wrote down what I saw for amounts.
