Italian Sunday Dinner: Chicken Fettuccine Alfredo

Ladies, even though it’s not Sunday yet, I thought it would be fun to share with you many of my favorite  Italian recipes that I serve on Sunday. I will begin posting next Saturday my Sunday recipes. This is a tradition in my house that began when the kids were little. On Sundays, I served an  Italian recipe passed down from my husband’s family or pasta. I love keeping the tradition of an Italian Sunday dinner that my husband’s Italian family started. Even though the children are grown, we try to get together at least once a month for an Italian Sunday dinner.  I believe it’s important to keep traditions going even if I am only doing it with my husband and Sammy. So today, I am going to share my recipe for Chicken Fettuccine Alfredo.

When I first met my husband, his Italian Sunday dinner had many courses. A traditional Italian dinner is served with at least five courses. Instead, I only serve an appetizer, pasta, salad, and dessert when we have the family over. Our pasta dish is the primary dish, but pasta is served before the main course for a traditional Italian dinner.

Sunday Pasta: Chicken Fettuccine Alfredo

Homemade Fettuccine Aflredo Pasta with Chicken

Ingredients

for 6 servings

  • 1 ½ lb chicken breasts
  • 2 tablespoons butter + 2 tablespoons of Olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 16 oz Fettuccine penne pasta, cooked Preferably fresh!! (See my homemade pasta recipe)
  • Alfredo Sauce (See recipe)
  • ¼ cup fresh Italian parsley

Alfredo Sauce

  • Salt
  • 4 tablespoons butter
  • 3 small cloves of garlic, finely chopped
  • 2 cups heavy cream
  • 1 large egg yolk
  • 2 cups freshly grated Parmigiano-Reggiano cheese
  •  Freshly ground pepper to taste

Instructions

  1. In a large skillet over medium-high heat, heat oil and butter.
  2. Season chicken with oregano, basil, salt, and pepper. Cook until golden and cooked through, 10 minutes per side. Let rest for 10 minutes, then slice.
  3. Saute the garlic and butter together until softened — about 2 minutes.
  4.  Whisk the cream with the egg yolk in a bowl until blended; pour into the garlic butter.
  5. Add heavy cream and let simmer over medium-high heat for about 5 minutes to thicken. Then add salt and pepper to taste. Add half of the parmesan cheese to the mixture and whisk well until smooth.
  6. Toss alfredo sauce with fettuccine pasta and add half of the parmesan cheese. Once it is tossed, garnish with the remaining parmesan cheese. Add a little pasta water if it needs to be thinned out.
  7. Add the cooked sliced chicken.
  8. Garnish with fresh parsley.

Homemade Pasta

You only need 4 ingredients to make delicious fresh pasta at home, and there’s a good chance you have all of them on hand already:

  • All-purpose flour – I use all-purpose flour for my homemade pasta. Some people use semolina flour to make great fresh pasta, but this homemade pasta recipe proved me wrong.
  • Eggs – The key ingredient for adding richness and moisture to the dough!
  • Olive oil – Along with the eggs, a splash of olive oil moistens the dough and helps it come together.
  • Salt – Add it to the dough and the pasta water for the best flavor.

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • ½ teaspoon salt
  • ½ tablespoon extra-virgin olive oil

Instructions

  • Place the flour on a clean work surface and make a nest. Add the eggs, olive oil, and salt to the center and use a fork to gently break up the eggs, keeping the flour walls intact as best as you can. Next, use your hands to bring the flour inward to incorporate gently. Continue working the dough with your hands to bring it together into a shaggy ball.
  • Knead the dough for 8 to 10 minutes. In the beginning, the dough should feel pretty dry, but stick with it! It might not feel like it’s going to come together, but after 8-10 minutes of kneading, it should become cohesive and smooth. If the dough still seems too dry, sprinkle your fingers with a tiny bit of water to incorporate; if it’s too sticky, dust more flour onto your work surface. Shape the dough into a ball, wrap in plastic wrap, and let rest at room temperature for 30 minutes.
  • Dust 2 large baking sheets with flour and set aside.
  • Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the Pasta Roller Attachment three times on level 1 (the widest setting).
  • Set the dough piece onto a countertop or work surface. Fold both short ends to meet in the center, then fold the dough in half to form a rectangle (see photo above).
  • Run the dough through the pasta roller three times on level 2, three times on level 3, and one time each on levels 4, 5, and 6.
  • Lay half of the pasta sheet onto the floured baking sheet and sprinkle with flour before folding the other half on top. Then, sprinkle more flour on top of the second half. Every side should be floured so that your final pasta noodles won’t stick together.
  • Repeat with remaining dough.
  • Run the pasta sheets through the Pasta Cutter Attachment (pictured as the fettuccine cutter). Repeat with remaining dough. Cook the pasta in a pot of salted boiling water for 1 to 2 minutes.

Sunday Style

My Sunday style is very casual. It usually consists of white jeans or shorts. I found this cute pom pom style top recently and love the mint green color. This simple but eye-catching cute piece can be styled with jeans or shorts and is suitable for daily wear or an evening out. It comes in 16 colors, and I am thinking of getting a couple more! I am wearing a size large because I hate returning clothes that I purchase online!

    I’m going to try this. I love fettuccine Alfredo. And the chicken will add something to it. I’ve never made this before. I have made pasta with my mixer and the attachments. But I’d rather just buy it. There’s just my husband and myself. This sounds wonderful. And I love your outfit. I usually don’t dress well when I’m cooking, because I’m messy. I guess I could put an apron on.

      I find that many fresh kinds of pasta are just as delicious as homemade pasta and less the work!
      Sometimes I add mushrooms, asparagus, or peas to my chicken Fettucine Alfredo.
      I always wear an apron when I am cooking for the family on Sunday.
      I like to dress up a bit when I entertain.
