Celebrating Valentine’s Day with Sammy

Who will you be celebrating Valentine’s Day with? My husband will be on a business trip,, so I will celebrate at home with Sammy this year.  We still make it a special day even without hubby. This means Sammy will be getting presents! We love celebrating together, and I will make a special dinner for the two of us. I’ll even provide the flowers!

My Valentine’s Day Outfit

I recently purchased this Poplin Knit Mix Embroidered Sleeve Tee at Chico’s. I don’t own a lot of red but this reddish-pink color works well with my complexion.  The top features embroidered embellishments, the woven sleeves hold their shape, while the knit body offers comfortable ease of wear. Pair this vibrant top with white crops or jeans for a simple solution to everyday looks.  The top comes in navy too.

I love the details on the sleeves. My jewelry is also from Chico’s, but they are no longer avaialble. I think Chico’s has the best jewelry! Don’t you agree?

The applique jeans are also from Chico’s. I first wore them in this post. As I said before, any pair of white pants or jeans will work with this top. Just think you can use this top and white jeans for any patriotic holiday!

Our Special Valentine’s Day dinner menu

I purchased my placemats, napkins, and Valentine’s Day blocks at Home Goods. I always shop there for fun little things. The flowers are from Smith’s here in Park City.

Shrimp Scampi with Pasta

Serves 4

Homemade Cooked Shrimp Scampi with Pasta with Parsley

Ingredients

  • 1 (16-ounce) package of linguine pasta
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 pinch of red pepper flakes (Optional)
  • 1 pound shrimp, peeled and deveined
  • 1 pinch of kosher salt and freshly ground pepper
  • ½ cup dry white wine
  • 1 lemon, juiced
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup finely chopped fresh parsley leaves ( sometimes I add chopped fresh basil if I have it)
  • 1 teaspoon extra-virgin olive oil, or to taste

Directions

  1. Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.

  2. Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir garlic and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, occasionally, stirring for 2 to 3 minutes. Remove shrimp from the skillet and keep warm.

  3. Pour white wine and lemon juice into the skillet and boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in the skillet, stir 2 tablespoons olive oil into the butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon of olive oil to serve.

  3. So glad to see colors other than red and pink being showcased for Valentine’s Day. I fell in love with and purchased a kind of rusty orange woven-looking sweatshirt with hearts and will pair it with a red iridescent bead necklace. Sounds like a strange color combo here but the beads kind of have the same color as the top. Anyway, you and I will both be wearing something other than the expected RED!! Your table is lovely. And the flowers echo that pretty coral color of your top. Beautiful.
