Celebrating Christmas After Christmas on New Year’s Day
Did you have a wonderful holiday weekend? We had a small Christmas with just the immediate family in our house which included our son Michael and his family. It was because we all got Covid either at a funeral we attended or on the airplane. What I thought was a head cold turned out to be Covid. Everyone except Michael tested positive for Covid! It’s been 10 days since we came down with the symptoms. Sadly, we couldn’t celebrate Christmas with my daughter Lisa and celebrate her birthday (also on Christmas). So on New Year’s Day, we will be celebrating Christmas after Christmas and belated birthdays with our entire family!
Celebrating Christmas after Christmas
I know that it’s not unusual to have two Christmas celebrations because of family obligations. Many of you celebrate the holidays twice but this is the first time being sick with COVID changed how we celebrate as a family.
Unfortunately, we couldn’t go to church or celebrate with my daughter-in-law’s family but it did turn out rather nice. Lots of football games to watch and I still made my Christmas morning brunch.
We drank mimosas while opening the few gifts we had. Because we’re getting together on New year’s Day we kept many of the gifts unopened until all the family gather again.
Luckily we had a couple of gingerbread houses left from Thanksgiving to entertain Lucie, Livie, and their parents on Christmas day. My detailed oriented son helped with Livie’s but I love Lucie’s house the best.

We will once again be serving mimosas when we open our gifts. I will probably make a breakfast casserole too.
Since it’s going to be my son Michael’s birthday on New Year’s Day he has requested my Veal Parmigiana and Chocolate Lava Cake for dessert.
Veal Parmigiana
You can substitute chicken for veal. Serve it with your favorite pasta.
Ingredients
- 1/2 cup all-purpose flour
- salt and pepper
- 2 eggs
- 1 T.milk
- 1 cup Italian bread crumbs
- 1 cup Parmesan cheese ( divided)
- 1/2 tsp. garlic powder
- 6-8 veal cutlets ( or chicken)
- olive oil for frying
- Homemade marinara sauce
- mozzarella cheese
How to make Veal Parmigiana:
Prepare three dipping bowls. One will have flour mixed with salt and pepper. Another will have eggs whisked with milk. And the last will have dried Italian bread crumbs with 1/4 cup of Parmesan cheese and 1/2 tsp. garlic powder.
Dip veal cutlets in the flour mixture first, then the egg mixture and then in the bread crumbs. Place the dipped veal cutlets on a plate and refrigerate for 30 minutes.
Fry the chilled cutlets in olive oil until browned on each side. Then place the fried veal on a baking sheet and cover it with marinara sauce. Bake for 20 minutes at 350 degrees. Add mozzarella and Parmesan cheese. Bake until the cheese melts. (about 5 minutes)
Molten Lava Cake
You won’t believe how easy it is to make molten chocolate lava cakes at home. They are the perfect individual desserts that are purposefully slightly undercooked, resulting in a gooey and melty chocolate center that oozes out when you cut into it.
Ingredients
- ½ cup unsalted butter
- 6 ounces bittersweet chocolate chopped
- 2 large eggs
- 2 large egg yolks
- ¼ cup granulated sugar
- ⅛ teaspoon salt
- 2 tablespoons all-purpose flour
Instructions

Preheat the oven to 450F. Butter and lightly flour 6 (4- to 5-ounce) ramekins and place them on a baking sheet.

Combine the butter and chocolate in a double boiler and melt over low heat, stirring until smooth. Or, place the butter and chocolate in a microwave-safe bowl and microwave on high, stirring every 30 seconds until melted. Whisk together until smooth.

In a large mixing bowl, combine the eggs, egg yolks, sugar, and salt. Beat on medium speed until thick and pale yellow. Fold the chocolate mixture and flour into the egg mixture until well combined. Divide the batter among the prepared ramekins.

Bake for 6 to 8 minutes or until the sides of the cakes are firm set but the center is jiggly. Let the cakes cool in the ramekins for 1 minute.

Place a small dessert plate over the top of each ramekin and carefully turn it over, inverting the cake onto the plate. Let stand for about 10 seconds, then remove the ramekin to unmold the cakes. Sift powdered sugar on top and garnish with berries, if desired. Serve immediately.
Since we’re having Christmas after Christmas I decided to wear this gorgeous abstract print tunic for our family celebration.
